Freshly roasted coffee always tastes best when it's about 7-10 days from roast and ordinarily is at it's best for a further 3-4 weeks. But when pre-ground the coffee's vibrancy can begin to fade faster. The coffee doesn't go off, but the aromas do tend to fade.
